It is said that the thief stole a stick of salami from a vendor at a fair and concealed it amidst a field of wild fennel. Upon retrieval, the salami had absorbed the sweet flavor and fragrance of the fennel, giving rise to the distinctive taste of Finocchiona. Columbus crafts its Finocchiona Salami using whole cuts of pork sourced from animals never treated with antibiotics, along with fresh garlic, sherry wine, and wild fennel seeds to impart a subtle aroma and flavor. Slow-aged for up to 90 days, depending on its size, this salami recipe boasts a delicate taste that garnered the prestigious Good Food Award for Best Charcuterie in 2013.
