Herbsaint is an anise-flavored liqueur, developed by J. Marion Legendre in New Orleans during the 1930s as a substitute for absinthe, which was prohibited in America at the time. Even though the ban has been lifted, this liqueur continues to enjoy popularity and is still a key ingredient in the traditional New Orleans recipe for a Sazerac cocktail.
